Rosemary-seasoned seared lamb chops topped with a refreshing mint oil for a classic and flavorful dish.
Ingredients:
  • 8 lamb chops
  • 2 tablespoons olive oil, divided
  • 2 teaspoons chopped fresh rosemary
  • salt and ground black pepper to taste
  • 0.25 cup mint leaves
  • 3 tablespoons extra-virgin olive oil
Instructions:
  • Prepare the lamb chops by coating them with a luscious 1 tablespoon of olive oil, then generously seasoning with aromatic rosemary, salt, and pepper. Let the flavors meld in the fridge for 15 minutes to 2 hours.
  • In a skillet, warm 1 tablespoon of olive oil. Add chops and sear until golden on each side, about 2 to 3 minutes per side. Use an instant-read thermometer to check that the center reaches 145 degrees F (63 degrees C).
  • As the chops cook, prepare the mint oil by blending mint leaves with extra-virgin olive oil, lemon juice, and lemon zest until smooth.
  • Drizzle the fragrant mint oil over the succulent chops.
