Juicy lamb cutlets, perfect for a quick and delicious meal.
Ingredients:
  • 400g can four bean mix, rinsed, drained
  • 250g can cherry tomatoes, quartered
  • 150g rocket
  • 62.50 ml balsamic dressing
  • 12 lamb cutlets
  • 1 small red onion, thinly sliced
Instructions:
  • Preheat a chargrill or barbecue on high heat. Grill lamb for 2-3 minutes on each side, until desired doneness.
  • In a salad bowl, mix together the rest of the ingredients. Serve the lamb with the bean salad.
