Create a sensational lamb dinner with just a handful of ingredients.
Ingredients:
  • 36.40 gm olive oil
  • 2 x 400g cans brown lentils, drained, rinsed
  • 80g baby spinach
  • 60g feta
  • 12 French-trimmed lamb cutlets
  • 2 tsp lemon pepper seasoning
Instructions:
  • In a non-stick frying pan over medium heat, warm 1 tablespoon of oil. Cook garlic and lentils for 3 to 4 minutes until heated through, then transfer to a bowl. Mix in spinach and crumbled feta until just combined. Season with salt and pepper, then cover to keep warm before serving.
  • Drizzle the remaining oil into the sizzling pan. Sear cutlets in batches, cooking each side for 2 to 3 minutes for medium doneness. Generously sprinkle seasoning on both sides of the cutlets.
  • Plate the lentil salad elegantly, layering it with the succulent cutlets, and present it beautifully for a delightful dining experience.
