Lamb cutlets with tomato salsa

Flavorful and easy one-pot meal.
Ingredients:
  • 4 large desiree potatoes, thickly sliced
  • 20.00 ml red wine vinegar
  • 36.40 gm olive oil
  • 3 tomatoes, roughly chopped
  • 1/2 small red onion, finely chopped
  • 62.50 ml fresh basil leaves, shredded
  • 62.50 ml pine nuts, toasted
  • 8 lamb cutlets, trimmed
Instructions:
  • In a microwave-safe bowl, place the potato and add 2 tablespoons of cold water. Cover with plastic wrap and microwave on high for 8 minutes, or until the potato is tender. Drain the water before proceeding.
  • In a large bowl, mix together vinegar and 1 1/2 tablespoons of oil. Add tomato, onion, basil, and pine nuts. Season with salt and pepper, then toss everything together.
  • Heat the remaining oil in a large non-stick pan over medium-high heat. Sear the lamb in batches for 3 to 4 minutes per side for a medium cook or until done to your preference. Place on a plate and cover with foil.
  • Place the potato slices in the pan and cook until golden on each side, which should take about 2 to 3 minutes. Divide the potatoes among the plates and then top them with the cutlets and the flavorful tomato mixture. Serve and enjoy your delicious meal!
