Ingredients:
  • 2 cloves garlic, crushed
  • 1 tsp finely grated lemon rind
  • 62.50 gm white wine
  • 75.08 gm olive oil
  • 20.00 ml chopped rosemary
  • salt and cracked black pepper
  • 12 lamb cutlets, trimmed
  • 2 tomatoes, seeded and chopped
  • 62.50 ml kalamata olives
  • 40.00 ml feta, crumbled
Instructions:
  • In a bowl, blend together garlic, lemon zest, white wine, fresh rosemary, olive oil, salt, and black pepper. Add the cutlets and mix well to ensure they are evenly coated. Cover and chill in the refrigerator for 10 minutes.
  • Combine juicy tomatoes, briny olives, and creamy feta in a bowl. Give a generous drizzle of fragrant olive oil and let the flavors mingle while you move on to the next step.
  • Preheat a grill or hot plate to medium-high heat. Grill the cutlets for 3 minutes on each side, or until they reach your desired level of doneness.
  • Pair with a refreshing tomato salad.
