Lamb kofta

Add this tantalizing exotic starter to your spring BBQ spread.
Ingredients:
  • 1kg Lamb Mince
  • 1 small brown onion, chopped
  • 1/2 tsp chilli flakes
  • 20.00 ml chopped fresh mint leaves
  • 20.00 ml chopped fresh flat-leaf parsley leaves
  • 5.00 gm mild paprika
  • 1.25 gm ground ginger
  • 5.00 gm ground cumin
  • 1 tsp ground coriander
Instructions:
  • Combine mince, onion, garlic, chilli flakes, mint, parsley, paprika, ginger, cumin, and coriander in a bowl, mixing thoroughly.
  • Form the lamb mixture into sixteen 8cm-long sausages, one at a time using 1/4 cup of mixture for each. Skewer one sausage onto each skewer. Chill on a large baking tray, covered, in the refrigerator for 20 minutes until firm.
  • Preheat a well-oiled barbecue plate over high heat. Place the koftas on the plate and lower the heat to low. Cook for 10 minutes, turning occasionally, until fully cooked. Transfer the koftas to a large baking tray, cover them with foil, and let them rest for 5 minutes before serving.
