Spiced lamb kofta: A truly special blend of flavors.
Ingredients:
  • 500g lamb mince
  • 1 red onion, finely chopped
  • 125.00 ml firmly packed fresh continental parsley leaves
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 22.20 gm tomato paste
  • 35g (1/2 cup) fresh breadcrumbs (made from day-old bread)
  • 1 egg, lightly whisked
  • Salt & freshly ground black pepper
  • 75g (1/2 cup) plain flour
  • 36.40 gm olive oil
Instructions:
  • Prepare the baking tray with plastic wrap. In a large glass bowl, mix together the lamb, onion, parsley, garlic, cumin, coriander, cinnamon, and tomato paste. Add the breadcrumbs and egg, then stir thoroughly. Season with salt and pepper to taste.
  • Form the mixture into 16 4cm balls and arrange them on the tray. Cover with plastic wrap and chill in the fridge for 15 minutes.
  • - Spread flour on a plate, then gently coat kofta in flour, shaking off any extra. - Heat half of the oil in a frying pan over medium heat. Cook half of the kofta, turning occasionally, for 8 minutes until fully cooked. Place on a plate lined with paper towel. - Repeat with the remaining oil and kofta, ensuring to reheat the oil between batches.
  • Present elegantly on a serving platter.
