Create a nutritious and vibrant dish bursting with fresh flavors.
Ingredients:
  • 400g lean lamb mince
  • 1 small red onion, coarsely grated
  • 5.00 gm ground cumin
  • 1 tsp dried mint leaves
  • 170g (1 cup) burghul (cracked wheat)
  • 250g punnet mini roma tomatoes, quartered
  • 4 shallots, trimmed, thinly sliced
  • 82.50 ml fresh mint leaves, torn
  • 82.50 ml fresh continental parsley, torn
  • Olive oil spray
  • 80ml (1/3 cup) bought low-fat tzatziki
Instructions:
  • Mix together mince, onion, cumin, garlic, and dried mint until well combined. Separate the mixture into 12 equal portions and mold each portion around skewers. Transfer the skewers onto a tray, cover them, and chill in the fridge for 20 minutes.
  • Place the burghul in a heatproof bowl and cover with boiling water. Let it sit for 20 minutes until tender. Rinse under cold water, drain, and squeeze out excess water. Combine the burghul with tomato, shallot, fresh mint, parsley, and lemon juice in a bowl.
  • Heat up the barbecue grill or chargrill on high and spray with oil. Cook the koftas, turning occasionally, for about 6 minutes until they are golden and cooked through.
  • Plate the burghul salad evenly on serving plates, then place the koftas on top and serve with tzatziki.
