Turn leftover lamb casserole into a delicious family-friendly curry.
Ingredients:
  • 87.50 gm korma curry paste
  • 1/2 quantity Lamb casserole (see notes)
  • 63.13 gm pure cream
  • 62.50 ml shredded fresh mint leaves
  • Steamed Basmati rice, to serve
Instructions:
  • In a medium, heavy-based saucepan over medium-high heat, heat oil. Add curry paste and cook, stirring, for 30 seconds until fragrant.
  • Combine the Lamb casserole ingredients in the pot and stir well. Bring the mixture to a gentle boil, then lower the heat to simmer for 15 minutes, or until heated through.
  • Stir in cream and fresh mint, cooking for 2 minutes or until warmed. Serve over rice for a delicious meal.
