Lamb korma

Whip up a delicious and aromatic lamb korma for a memorable dinner feast!
Ingredients:
  • 36.80 gm vegetable oil
  • 1 onion, sliced
  • 2 garlic cloves, crushed
  • 2 tsp grated ginger
  • 1kg boneless lamb shoulder, trimmed, cubed
  • 115.50 gm korma curry paste
  • 400g can diced tomatoes
  • 400ml can coconut cream
  • 125.00 gm water or beef stock
  • 150g green beans, trimmed, halved
  • Coriander leaves , to serve
  • Pappadums, to serve
Instructions:
  • In a large saucepan over high heat, heat oil until shimmering. Sauté onion until tender, for about 4-5 mins. Add garlic and ginger, continue to sauté for 1 min.
  • Add succulent lamb to the sizzling pan and stir until it turns a beautiful golden brown in 3-4 minutes. Next, swirl in the aromatic curry paste and stir for another minute until its exotic fragrance fills the air.
  • Combine tomatoes, creamy coconut, and water or stock in the pot. Bring to a vigorous boil. Lower the heat and simmer, covered, for 50-60 minutes until the lamb is tender.
  • Mix beans in gently. Let simmer for an additional 4-5 minutes until soft. Garnish with fresh coriander leaves and enjoy with pappadums.
