Lamb meatballs

Ingredients:
  • 2 ripe tomatoes
  • 400 g lean lamb mince
  • 1 heaped teaspoon garam masala
  • olive oil
  • 1 pinch of saffron
  • ½–1 fresh red chilli
  • 2 spring onions
  • ½ a bunch of fresh coriander (15g)
  • 2 cloves of garlic
  • 1 x 400 g tin of chickpeas
  • 350 g passata
  • ½ a cucumber
  • 2 little gem lettuces
  • 1 bunch of radishes
  • 1 tablespoon extra virgin olive oil
  • 1 lemon
  • 1 heaped teaspoon harissa
  • 4 heaped tablespoons fat-free natural yoghurt
  • 8 small wholewheat tortillas
  • 1 orange
Instructions:
  • 1. Gather all your ingredients. Boil the kettle. Place a large frying pan over medium heat and a large lidded pan over medium-high heat. 2. In a bowl, mix 400g of lean lamb mince with salt, pepper, and 1 heaped teaspoon of garam masala. Divide into 4 portions and shape each into 4 balls with damp hands. Place them in the frying pan and add 1 tablespoon of olive oil. Cook, turning regularly until golden brown. 3. Place a pinch of saffron in a cup, cover with boiling water, and let it soak. Slice ½-1 fresh red chili, 2 trimmed spring onions, and the stalks from ½ a bunch of coriander. Add them to the large pan with 1 tablespoon of olive oil. Crush in 2 unpeeled garlic cloves with a crusher. Fry for 40 seconds, then add the saffron with its water, drained chickpeas, and passata. Cover and bring to a boil. 4. Mix 1 heaped teaspoon of harissa with 4 heaped tablespoons of natural yogurt in a small dish. For the salad, chop ½ a cucumber, 2 little gem lettuces, a bunch of radishes, and 2 ripe tomatoes. Combine on a board with 1 tablespoon of extra virgin olive oil, juice of 1 lemon, and season. 5. Adjust sauce consistency with water if needed, then pour into the meatball pan and season. Microwave 8 small wholewheat tortillas for 45 seconds (800W). 6. Serve the meatballs and sauce with orange wedges and a sprinkle of coriander leaves.
