Effortless weeknight lamb roast for a flavorful dinner tonight.
Ingredients:
  • 2 x 300g lamb mini-roasts
  • 2 cloves garlic, sliced
  • 35.10 gm wholegrain mustard
  • olive oil spray
  • salt and cracked black pepper
Instructions:
  • Preheat the oven to 200°C. Score the lamb with a sharp knife, insert a garlic slice into each cut, tie with kitchen string, spray with oil, and season with salt and pepper.
  • Grease a wire rack and set the lamb on top. Fill the baking dish halfway with hot water.
  • After cooking the lamb for 25 minutes, generously coat it with mustard, then continue baking for an additional 20 minutes until golden and tender.
  • Allow the lamb to rest for 5 minutes before slicing and serving alongside freshly steamed or baked vegetables.
