Tender slow-cooked lamb curry bursting with flavor.
Ingredients:
  • 1.2kg butterfly lamb leg, cut into 4cm pieces
  • 1 brown onion, finely chopped
  • 4cm-piece fresh ginger, peeled, finely grated
  • 4 tomatoes
  • 540g jar Rogan Josh Simmer Sauce
  • 1/2 red onion, finely chopped
  • 62.50 ml chopped fresh coriander
  • 42.00 gm fresh lemon juice
  • Steamed white rice, to serve
  • Pappadums, to serve
  • Greek-style natural yoghurt, to serve
Instructions:
  • Season the lamb with salt and pepper. Sear the lamb in batches in a hot non-stick pan until browned, then transfer to a large slow cooker. Spray the pan with oil between batches.
  • Sauté the brown onion and ginger in a pan until the onion is soft, then transfer to the slow cooker.
  • Roughly chop 2 tomatoes and combine them with the sauce in the slow cooker. Cover and cook on high for 3 hours or until the lamb is tender.
  • Halve the remaining tomatoes and remove the seeds using a teaspoon. Finely chop the tomato flesh. Mix the tomato, red onion, coriander, and lemon juice in a bowl. Season with salt and pepper. Serve the tomato salad alongside the rice and lamb rogan josh, accompanied by pappadums and yoghurt.
