Put a delicious spin on the classic Indian favorite right in your own kitchen.
Ingredients:
  • Olive oil cooking spray
  • 900g lean lamb, cut into 1cm pieces
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 56.00 gm Rogan Josh curry paste
  • 425g can crushed tomatoes
  • 125.00 ml low-fat yoghurt
  • 125.00 ml mint leaves, shredded
  • 400.00 gm cooked Basmati rice, to serve
  • 4 pappadums, to serve
Instructions:
  • Heat a saucepan over medium-high heat and spray with oil.
  • Season the lamb generously with salt and pepper. Sear one-third of the lamb in a saucepan over medium-high heat for 2 to 3 minutes until browned. Remove from the saucepan and repeat the process twice more with the remaining lamb pieces.
  • In a saucepan, sauté onion and garlic until soft, about 4 minutes. Stir in curry paste and cook for 1 minute. Add lamb and tomatoes, cover, and simmer over low heat for 15 minutes until lamb is tender.
  • Add the creamy yogurt and refreshing mint, then take it off the heat. Enjoy your dish alongside fluffy rice and crispy pappadums.
