Mouthwatering grilled herb-marinated leg of lamb.
Ingredients:
  • 1 (4 pound) lamb shank
  • 3 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 0.25 teaspoon ground thyme
  • 0.25 teaspoon dried basil
  • 0.25 teaspoon dried parsley
  • 0.5 teaspoon dried mint
  • 2 tablespoons ground black pepper
  • 1 pinch salt to taste
  • 1 pinch cayenne pepper, or to taste
  • 0.25 cup lemon juice
  • 3 tablespoons honey
Instructions:
  • Score the lamb shank in a crosshatch pattern about 1 inch apart and 1/2 inch deep, then transfer it to a shallow dish.
  • Combine olive oil, fresh herbs, black pepper, salt, and cayenne pepper in a bowl. Brush the mixture evenly over the lamb shank and refrigerate for at least 1 hour.
  • Get your grill ready by preheating it to medium heat and giving the grate a light coating of oil.
  • Combine the lemon juice and honey in a small bowl, stirring until silky smooth.
  • Grill the lamb shank, brushing with the lemon juice mixture every 15 minutes, until nicely browned outside and pink in the middle, for approximately 30 minutes per side. Check for doneness with an instant-read thermometer - it should register at 125 degrees F (52 degrees C).
