Creamy mashed carrots and potatoes perfectly complement the rich lamb dish.
Ingredients:
  • 18.20 gm olive oil
  • 4 (about 2kg) lamb shanks, trimmed
  • 1 bunch spring onions, roots trimmed, stems trimmed to 5cm lengths
  • 6 golden eschalots, peeled
  • 4 bacon rashers, rind and excess fat trimmed, finely chopped
  • 2 tsp dried oregano
  • 400g can diced tomatoes
  • 250ml (1 cup) beef stock
  • 125ml (1/2 cup) dry red wine
  • 40.00 ml coarsely chopped fresh oregano
  • 1 large (about 200g) desiree potato, unpeeled
  • 4 large (about 800g) carrots, peeled, cut into 3cm pieces
  • 41.20 gm milk
  • 20g butter
  • Pinch of salt
Instructions:
  • In a large, heavy-based saucepan over medium-high heat, heat the oil until shimmering. Add the lamb and cook, turning occasionally, for about 3 minutes, or until it's beautifully browned all over. Transfer the lamb to a plate.
  • Heat the saucepan until hot. Then add the spring onions, eschalots, bacon, garlic, and dried oregano. Cook while stirring for 5 minutes, or until the onion is browned and the bacon is slightly crisp.
  • Dust with flour and cook while stirring for 1 minute until the onion mixture thickens. Pour in tomato, stock, and wine, and bring to a boil. Add the lamb and simmer over medium heat, covered, turning occasionally for 1 1/2 hours until the lamb is tender. Mix in fresh oregano and season with salt and pepper.
  • To prepare the mashed carrot, boil the potato in a saucepan of water for 10 minutes. Add the carrot and continue cooking for another 10 minutes until the potato is tender. Drain and let it cool for 5 minutes. Peel and roughly chop the potato. Return both carrot and potato to the saucepan, then add milk and butter. Mash everything together over low heat until smooth. Season with salt to taste.
  • Serve the lamb shanks in onion gravy on a large dish and enjoy with creamy mashed carrots.
