Tender lamb shanks cooked with aromatic star anise and sweet potato for a comforting winter dish.
Ingredients:
  • 4 French-trimmed lamb shanks
  • 2 red onions, halved, thinly sliced
  • 3 garlic cloves, thinly sliced
  • 20.00 ml finely grated fresh ginger
  • 3 whole star anise
  • 22.20 gm no-added-salt tomato paste
  • 250ml (1 cup) salt reduced chicken style liquid stock
  • 250ml (1 cup) water
  • 400g can diced tomatoes
  • 400g sweet potato, peeled, cut into 2cm cubes
  • 2 tsp salt-reduced tamari
  • 10.60 gm lime juice
  • Baby coriander leaves, to serve
  • Steamed broccolini, to serve
Instructions:
  • Preheat oven to 160C/140C fan forced. Heat a large flameproof casserole dish over high heat, spray with olive oil, and brown lamb shanks in 2 batches for 1-2 minutes each side. Transfer to a plate.
  • 1. Lower the heat to medium and coat a casserole dish with olive oil. 2. Sauté onions for 5 minutes until softened, then add garlic, ginger, star anise, and cinnamon and cook for 1 minute until fragrant. 3. Mix in tomato paste for another minute. 4. Place the lamb shanks in the pan with stock, water, and tomatoes. 5. Bring to a boil, cover, and simmer.
  • Roast for 1.5 hours. Include sweet potato. Bake with a lid for another hour until lamb is extremely tender. Mix in tamari and lime juice. Season with pepper. Garnish with fresh coriander. Enjoy alongside broccolini.
