Greek Green Bean Stew made with fresh or French-style frozen beans, passed down through generations for a nostalgic and comforting meal.
Ingredients:
  • 3 tablespoons olive oil
  • 1 large onion, chopped
  • 1 stalk celery, chopped
  • 3 pounds boneless lamb shoulder, cut into 2 inch pieces
  • 1 (8 ounce) can tomato sauce
  • 3 cups hot water
  • 2 pounds fresh green beans, trimmed
  • 0.5 teaspoon dried mint
  • 0.5 teaspoon dried dill weed
  • 1 pinch ground cinnamon
  • 1 pinch white sugar
Instructions:
  • In a large pot over medium heat, sauté onion and celery in oil until golden. Add lamb, cook until browned, then stir in tomato sauce and water. Simmer on low heat for around 1 hour.
  • Mix in the green beans, then enhance them with a blend of parsley, mint, dill, cinnamon, sugar, salt, and pepper. Keep cooking until the beans reach the desired tenderness.
