Lamb with caramelised onion and carrots

Impress with succulent roast lamb paired with sweet caramelized onions and carrots.
Ingredients:
  • 2.5kg Lamb Whole Leg
  • 2 garlic cloves, thinly sliced
  • 36.40 gm olive oil
  • 23.40 gm wholegrain mustard
  • 40.00 ml balsamic vinegar
  • 6 small brown onions, halved
  • 1 bunch Dutch carrots, trimmed, peeled
  • Coles Bakery Stone Baked Pane Di Casa Baguette, to serve
Instructions:
  • Preheat your oven to 200°C.
  • Make 1cm-deep incisions in the lamb's skin using a small, sharp knife. Insert a slice of garlic into each cut. Mix oil, mustard, and vinegar in a small jug, season, then coat the lamb with half of the mustard mixture. Arrange onion slices in a single layer at the bottom of a large roasting pan and place the lamb on top. Roast for 1 1/2 hours, covering with foil if needed to avoid excessive browning.
  • Place the carrots surrounding the lamb in the pan, then generously drizzle the remaining mustard mixture over the carrots and onion. Roast for 30 minutes until cooked to your desired doneness. Transfer the lamb to a serving platter, cover with foil, and let it rest for 15 minutes. Move the onion and carrots to another serving platter, keeping them warm. Finally, pour the pan juices into a small serving dish.
  • Present the lamb alongside the onions, carrots, flavorful pan juices, and freshly baked bread.
