Add bold harissa yogurt to succulent lamb chops.
Ingredients:
  • 500g pkt Roasting Vegetables with Garlic & Rosemary
  • 400g can chickpeas, rinsed, drained
  • 18.20 gm olive oil
  • 3 tsp harissa spice blend
  • 4 Lamb Forequarter Chops
  • 250g pkt Amoroso Tomatoes or vine-ripened cherry tomatoes
  • 200g Greek-style yoghurt
Instructions:
  • Preheat the oven to 200C. Mix the roasting vegetables, chickpeas, oil, and 2 teaspoons of harissa in a large baking dish. Ensure everything is evenly coated. Roast in the oven for 20 minutes.
  • Heat a well-oiled chargrill over high heat while you cook the lamb for 2 minutes on each side, or until it's beautifully browned.
  • Place the succulent lamb and ripe tomatoes in a baking dish and roast until the vegetables are tender and the lamb is cooked to perfection, typically around 20 minutes.
  • Mix the yogurt and the rest of the harissa in a small bowl.
  • Season the lamb and vegetable mixture generously before serving with a dollop of creamy yogurt.
