Lamb with honey mustard sauce

Quick and delicious lamb backstrap dinner, packed with protein, ideal for busy nights.
Ingredients:
  • 450g lamb backstraps
  • olive oil
  • salt and pepper
  • 5.00 gm cornflour
  • 375ml beef stock
  • 28.60 gm honey
  • 35.10 gm wholegrain mustard
  • 1 green onion, chopped
Instructions:
  • Rub the lamb with a touch of olive oil and season generously with salt and pepper. Heat a large non-stick pan over medium-high heat. Sear the lamb for 4 minutes on each side (working in batches if needed) until it reaches your desired doneness. Let the lamb rest covered with foil to lock in flavor before serving.
  • Whisk cornflour and 1 tablespoon of water in a small bowl until smooth paste forms.
  • In a small saucepan over medium heat, combine the stock, honey, and mustard. Stir until the sauce comes to a simmer. Add the cornflour mixture and green onion, stirring diligently to keep the sauce smooth. Cook for an additional minute, then remove from heat.
  • Slice the lamb thickly and serve alongside honey mustard sauce and sauteed vegetables.
