Create mouthwatering chargrilled lamb chops with sweet potato mash, rocket, and asparagus using just six simple ingredients.
Ingredients:
  • Tomato chutney, to serve
  • 8 lamb mid loin lamb chops
  • Salt & freshly ground pepper
  • 2 x 475g containers mashed sweet potatoes
  • 2 bunches asparagus, woody ends trimmed
  • 50g baby rocket leaves
Instructions:
  • Preheat a chargrill pan over medium-high heat. Season both sides of the lamb generously with salt and pepper. Place the lamb in the pan and adjust the heat to medium. Grill for 3-4 minutes on each side for medium doneness, or until it reaches your preferred level of doneness. Remove from the pan, tent with foil, and let it rest on a plate.
  • While the mashed potato heats according to packet instructions, steam or microwave the asparagus.
  • Scoop the mash onto individual serving plates and accompany with rocket, asparagus, lamb chops, and chutney.
