Ingredients:
  • 380g (2 1/2 cups) icing mixture
  • 30g (1/4 cup) cocoa powder
  • 160ml (2/3 cup) warm water
  • 1 plain unfilled double sponge cake
  • 170g (2 cups) desiccated coconut
Instructions:
  • For the kids: Sift the icing mixture and cocoa into a big bowl. Slowly pour in the warm water, then whisk until smooth. Set aside.
  • With a serrated knife, carefully slice each cake layer into 8 wedges with adult supervision.
  • Let's have some fun! Place coconut in a big bowl. Dip each cake wedge in cocoa mixture using 2 forks to coat. Transfer the chocolate-covered cake to the coconut-filled bowl. Gently toss and coat the cake with coconut using your fingers. Let it sit on a wire rack for 1 1/2 hours until it sets.
