Sweet and sour meatballs with pineapple, carrots, bell peppers in a savory brown sugar sauce - perfect as a main dish or appetizer option!
Ingredients:
  • 0.5 cup finely chopped onion
  • 2 large eggs, beaten
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons granulated sugar
  • 1 teaspoon seasoning salt
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon ground black pepper
  • 1 (20 ounce) can pineapple chunks with juice
  • 0.25 cup water, or as needed
  • 0.5 cup packed brown sugar
  • 0.33333331346512 cup water
  • 3 tablespoons distilled white vinegar
  • 3 tablespoons cornstarch
  • 0.5 teaspoon seasoning salt
  • 1 large carrot, diced
  • 1 large green bell pepper, cut into 1/2 inch pieces
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and lightly grease a big, rimmed baking sheet.
  • Prepare the meatballs by thoroughly combining ground beef, bread crumbs, onion, eggs, Worcestershire sauce, sugar, salt, ginger, and pepper in a large bowl. Shape the mixture into 1-inch meatballs and arrange in a single layer on the baking sheet.
  • Bake in the preheated oven for 10 to 15 minutes until meatballs are slightly undercooked.
  • Prepare the sauce by combining pineapple juice with water in a measuring cup until it reaches 1 cup of liquid. Set aside the pineapple chunks.
  • In a large pot over medium heat, combine pineapple juice mixture, brown sugar, 1/3 cup water, vinegar, and soy sauce. Add cornstarch, ginger, and seasoning salt. Cover and cook until thickened, about 3 to 5 minutes.
  • Stir in pineapple chunks, bell pepper, and carrot, ensuring meatballs are fully coated with the sauce. Cook uncovered for about 20 minutes until meatballs are fully cooked through, reaching a minimum internal temperature of 160°F (71°C).
