"Delicate buttery 'cat's tongue' cookies, shaped with a press or pastry bag, dipped in semisweet chocolate and can be filled as chocolate sandwiches."
Ingredients:
  • 9 tablespoons butter, softened
  • 3 egg whites
  • 1.5 cups all-purpose flour
  • 6 (1 ounce) squares semisweet chocolate, melted
Instructions:
  • Preheat the oven to a toasty 400 degrees Fahrenheit (200 degrees Celsius) and gently grease the baking sheets.
  • Cream together butter, 1/2 cup plus 2 tablespoons sugar until smooth. Add egg whites one at a time till fluffy. Stir in vanilla, then mix in flour until combined. Dough will be slightly stiff.
  • Pipe the dough onto a prepared baking sheet using a cookie press or a pastry bag fitted with a medium star tip, forming 3-inch lengths resembling ladyfingers.
  • Bake cookies in a preheated oven until they turn a golden straw color, for about 10 minutes. Then, allow them to cool on a wire rack.
  • Once the cookies have cooled, simply dip one end of each cookie in melted chocolate and place them on wax paper until the chocolate hardens. Store the cookies in a cool place.
