Larb with spicy mango salsa

Spicy mince lettuce wraps with mango cucumber salsa.
Ingredients:
  • 1 large mango, finely chopped
  • 1 Lebanese cucumber, halved, deseeded, finely chopped
  • 86.63 gm lime juice
  • 2 small green chillies, deseeded, thinly sliced
  • 1 lemongrass stalk, trimmed, finely chopped
  • 700g pork and veal mince
  • 24.40 gm fish sauce
  • 1 small red onion, thinly sliced
  • 125.00 ml fresh Thai basil leaves
  • 80g bean sprout
  • 8 iceberg lettuce leaves, to serve
Instructions:
  • In a bowl, mix together mango, cucumber, 1 tablespoon of fresh lime juice, and half of the chopped chilli. Set the mixture aside.
  • 1. Heat oil in a wok over medium-high heat. Add lemongrass and garlic and stir-fry until fragrant, about 30 seconds. 2. Add mince and cook for 5 to 7 minutes until browned and fully cooked. 3. Stir in the remaining chilli.
  • Stir in fish sauce and the rest of the lime juice. Heat through while stirring. Mix in onion, basil, and beansprouts. Combine well. Fill lettuce leaves with the mince mixture. Serve with mango salsa.
