Larry's Smoked BBQ Spare Ribs

Brown sugar and paprika elevate these succulent BBQ ribs, perfect for grilling, smoking, or oven-baking.
Ingredients:
  • apple wood chips
  • 0.5 cup paprika
  • 2 tablespoons light brown sugar
  • 2 tablespoons garlic powder
  • 1 tablespoon salt
  • 1 tablespoon ground black pepper
  • 3 racks pork spareribs
  • 3 cups apple juice
  • 3 cups barbeque sauce
Instructions:
  • Follow the manufacturer's instructions to set up a charcoal indirect fire in a smoker or grill. Once the coals are lit, add wood chips and ensure the temperature stays between 230 and 260 degrees F.
  • Combine paprika, brown sugar, garlic powder, salt, and pepper in a bowl and thoroughly blend. Generously coat ribs with the seasoning ensuring full coverage.
  • Lay the ribs on the preheated smoker or grill, away from direct heat. Smoke the ribs covered, adding wood chips as required to keep the temperature steady, until the rub is dry, about 1 to 2 hours. Brush with apple juice and keep cooking, basting every half hour, for an additional 2 1/2 to 3 1/2 hours.
  • Glaze ribs with BBQ sauce on both sides and grill for 15 minutes. Glaze again and grill until meat easily comes off the bone, for an additional 10 to 15 minutes. Check the internal temperature with a thermometer, it should be 145 degrees F (63 degrees C).
