Gluten-free lasagna: Green bell peppers filled with cottage cheese, beef, tomato sauce, and cheese.
Ingredients:
  • 6 green bell peppers, halved and seeded
  • salt to taste
  • water as needed
  • 1 pound ground beef
  • 3 (8 ounce) cans tomato sauce
  • 1 (6 ounce) can tomato paste
  • 0.5 teaspoon dried oregano
  • ground black pepper to taste
  • 1 (12 ounce) container cottage cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded Cheddar cheese
Instructions:
  • Preheat oven to 350°F (175°C).
  • Place bell peppers, cut-side up, in a 10x15-inch baking dish. Sprinkle with salt and add enough water to reach 1/4-inch depth.
  • In a hot skillet, brown and crumble beef until cooked, about 5 to 7 minutes; discard grease. Add tomato sauce, tomato paste, 1 teaspoon salt, oregano, and black pepper to beef. Bring to a boil, then simmer for 15 minutes until flavors meld.
  • Stuff each bell pepper generously with a heaping tablespoon of cottage cheese, then layer on mozzarella cheese, Cheddar cheese, and meat sauce. Finish by sprinkling extra mozzarella and Cheddar cheese on top of each filled 'boat'.
  • Cook in the hot oven until peppers are soft and cheeses are gooey, for about 50 to 65 minutes.
