Cheesy beef-stuffed pasta shells - all the tasty lasagna goodness, but ready in a flash!
Ingredients:
  • 18 jumbo pasta shells
  • 1.5 pounds ground beef
  • 2 tablespoons chopped onion
  • 1 (12 ounce) can tomato paste
  • 1 (14 ounce) can tomato sauce
  • 0.5 teaspoon salt
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon garlic powder
  • 2 eggs
  • 3 cups cottage cheese
  • 1 (16 ounce) package shredded mozzarella cheese, divided
  • 0.5 cup grated Parmesan cheese
  • 2 tablespoons dried parsley
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C). Boil a large pot of lightly salted water. Add the shell pasta, cook until firm to the bite, approximately 5 minutes. Drain and rinse with cold water.
  • Once the shells are cooking, heat a large skillet over medium-high heat. Cook the beef and onion in the skillet until the beef is crumbly, browned, and no longer pink. Drain any excess grease and add tomato paste, tomato sauce, salt, oregano, and garlic powder. Simmer for 5 minutes. Spread half of the sauce into a 9x13-inch baking dish.
  • In a mixing bowl, whisk eggs and fold in cottage cheese, most of the mozzarella cheese, Parmesan cheese, parsley, salt, and pepper. Fill each shell with the cheese mixture and place in the baking dish. Pour the remaining meat sauce over the shells and top with the rest of the mozzarella cheese before baking.
  • Heat in the oven until the shells are warm in the center and the mozzarella cheese is melted and bubbly, for 25 to 30 minutes.
