Whip up a quick and delicious pasta dish with crispy salami, artichokes, and feta for a satisfying meal any night of the week.
Ingredients:
  • 500g packet lasagnette pasta
  • 60g sliced Danish salami, cut into thin strips
  • 280g artichoke hearts, drained, quartered
  • 200g punnet grape tomatoes, halved
  • 20.00 ml thyme leaves
  • 100g low-fat feta, crumbled
  • 8.00 gm brown sugar
Instructions:
  • Prepare the pasta by cooking it in a generously salted pot of boiling water according to the instructions on the package, typically around 15 minutes.
  • Preheat the grill to a sizzling medium-high heat. Grill the salami on a tray for 2 to 3 minutes until perfectly crispy. Then, move it to a plate with paper towel to absorb any excess oil.
  • After draining the pasta, transfer it back to the pan. Mix in salami, artichokes, tomatoes, thyme, garlic, feta, and lemon zest. In a separate container, blend 2 tablespoons of lemon juice with sugar. Drizzle the mixture over the pasta. Season with salt and pepper, then gently stir over low heat until thoroughly mixed. Finally, serve and enjoy.
