Marinated spiced yogurt chicken cooked with cumin and cream in a flavorful Indian dish. Serve over rice, potatoes, or naan to balance the spice and creaminess.
Ingredients:
  • 1 (8 ounce) container plain yogurt
  • 1 clove garlic, mashed into a paste
  • 2 tablespoons lemon juice
  • 1.5 teaspoons garam masala
  • 2 teaspoons white pepper
  • 5 saffron threads
  • salt to taste
  • 1.5 pounds skinless, boneless chicken, cut in 1-inch pieces
  • 1 tablespoon vegetable oil
  • 1 teaspoon cumin seed
  • 0.25 cup heavy cream
Instructions:
  • Combine yogurt, garlic paste, lemon juice, garam masala, white pepper, and saffron, then season with salt. Coat chicken in the marinade and let it sit in the fridge for 10-12 hours.
  • Begin by heating the oil in a frying pan until it shimmers. Add the cumin seeds and cook until aromatic for about 20 to 30 seconds. Proceed by adding the chicken and sear until golden. Lower the heat, cover, and cook until chicken is tender for approximately 15 minutes. Finish by stirring in the cream and gently heating. Serve promptly.
