Danish aebleskiver: Fluffy pancake-popover hybrid cooked in a special pan. Enjoy with confectioners sugar, maple syrup, or jam.
Ingredients:
  • 2 cups buttermilk
  • 2 cups white flour
  • 1 teaspoon baking soda
  • 3 eggs, separated
Instructions:
  • Combine the flour, salt, and baking soda in a bowl, sifting together. Mix in the buttermilk and egg yolks until a smooth batter forms.
  • In a large glass or metal mixing bowl, beat egg whites until foamy with soft peaks. Fold into prepared batter for added lightness and fluffiness.
  • Heat an aebleskiver pan over medium heat and coat each cup with cooking spray. Fill each cup with batter up to 2/3 full. Cook until golden brown on both sides, flipping with a toothpick as needed, for 1 to 2 minutes per side.
