Laura's Lemon Roasted Potatoes

Delicious lemon dill roasted potatoes, Mediterranean-inspired.
Ingredients:
  • 0.25 cup canola oil
  • 0.5 cup butter, melted
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon dried dill weed
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 5 large potatoes, peeled and cubed
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C).
  • Combine canola oil, melted butter, lemon juice, garlic, dill, salt, and pepper in a large bowl. Add potatoes and mix well. Spread coated potatoes on a baking sheet and pour any remaining liquid on top.
  • Roast the potatoes in the hot oven until golden and crisp, approximately 45 minutes.
