Garlic lovers' delight, perfect for appetizers with crackers or bread.
Ingredients:
  • 6 bulbs garlic
  • 4 cups white wine vinegar
  • 0.25 cup white sugar
  • 1 teaspoon whole black peppercorns
  • 4 whole cloves
  • 1 bay leaf
  • 2 dried red chile peppers
  • 1.5 tablespoons lemon zest
Instructions:
  • Prepare the garlic by trimming the tops and removing all but one layer of the outer skin. Set aside for later use.
  • In a saucepan, mix together vinegar, sugar, peppercorns, cloves, bay leaf, chile peppers, and lemon zest. Boil for 2 minutes, add garlic, and continue boiling for 4 minutes. Take off the heat and let it sit at room temperature overnight.
  • Transfer the garlic and brine mixture to a clean jar, ensuring the garlic heads are completely submerged. Discard the solids. Seal the jar, refrigerate, and use within 6 to 8 weeks. For extended storage, use sterile jars and process in hot water for at least 10 minutes to seal.
