Indulgent seafood medley baked in creamy sauce with mushrooms, green onions, and crispy breadcrumbs.
Ingredients:
  • 0.5 cup butter
  • 1 bunch green onions, chopped
  • 0.5 pound fresh mushrooms, chopped
  • 0.25 pound peeled and deveined medium shrimp (30-40 per pound)
  • 0.25 pound walleye fillets, cut into pieces
  • 0.25 pound cooked lobster meat, broken into chunks
  • 0.25 pound cooked crabmeat
  • 2 tablespoons dry sherry
  • 0.5 cup dry white wine (such as Chenin Blanc)
  • 1 (10.75 ounce) can condensed cream of shrimp soup (such as Campbell's®)
  • 1 cup half-and-half cream
  • 1 cup dry bread crumbs
  • 0.25 pound shredded Cheddar cheese
  • 0.5 cup dry bread crumbs
  • 0.5 cup freshly grated Parmesan cheese
  • 0.25 cup cold butter, cut into 1/2-inch pieces
Instructions:
  • Preheat the broiler and adjust the oven rack to 6 inches below the heating element.
  • In a large skillet over medium heat, melt half a cup of butter. Add green onions and mushrooms, cook until mushrooms soften (about 5 minutes). Add shrimp and walleye, cook until shrimp start to turn opaque (about 2 minutes). Finally, add lobster and crab, and cook briefly to heat through.
  • Combine sherry and white wine, bring to a simmer, and cook for 2 minutes. Add in shrimp, walleye, cream of shrimp soup, half-and-half, 1 cup breadcrumbs, and Cheddar cheese. Stir until cheese melts and mixture is bubbly. Transfer to a casserole dish, sprinkle evenly with 1/2 cup breadcrumbs and Parmesan cheese. Dot with pieces of cold butter.
  • Broil until the butter is melted and the bread crumbs are golden brown.
