Indulgent kitchen sink cowboy cookies packed with oatmeal, pecans, coconut, and chocolate chips made famous by First Lady Laura Bush.
Ingredients:
  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 sticks butter (6 ounces, 12 tablespoons), at room temperature
  • 3/4 cup white sugar
  • 3/4 cup brown sugar
  • 1 1/2 large eggs, beaten (See Recipe Note)
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups semisweet chocolate chips
  • 1 1/2 cups old fashioned rolled oats
  • 1 cup sweetened flaked coconut (we used shredded)
  • 1 cup chopped pecans
Instructions:
  • Preheat your oven to 350°F, positioning racks in the upper and lower thirds. Line two large baking sheets with Silpat or parchment paper.
  • Combine dry ingredients: In a large bowl, vigorously whisk together flour, baking powder, baking soda, cinnamon, and salt.
  • Prepare the cookie dough: In a standing electric mixer, cream the butter until smooth and light. Gradually mix in the white and brown sugar until well combined. Beat in eggs one at a time, then add the vanilla extract. Slowly incorporate the flour mixture on low speed until just combined. Fold in the chocolate chips, oats, coconut, and pecans until incorporated.
  • Shape the cookies: For larger cookies, generously portion 1/4 cup of dough onto the cookie sheets, ensuring they are 3 inches apart to spread evenly while baking. For smaller cookies, scoop 2 tablespoons of dough per cookie.
  • For perfectly baked cookies, preheat your oven to 350°F. Bake large cookies for 14-18 minutes or small cookies for 13-16 minutes. Remember to rotate the pan halfway through - front to back and top to bottom.
  • Allow the cookies to cool on the baking sheets for 5 minutes after removing them from the oven. Then transfer to a rack to cool completely.
