Easy savory beef pie, a favorite of my husband's. Leftovers make a great lunch. Top with shredded Cheddar for extra flavor.
Ingredients:
  • 3 potatoes, peeled and cubed
  • 1 pound lean ground beef
  • 1 large onion, diced
  • 1 green bell pepper, chopped
  • 2 tablespoons margarine
  • 0.25 cup milk
  • 1 (9 inch) unbaked pie shell
  • 1 (15 ounce) can cream-style corn
Instructions:
  • Preheat oven to 350°F (175°C).
  • In a saucepan, cover the potatoes with water and boil until tender, about 15 minutes. Drain and mash with margarine and milk until smooth.
  • Crumble ground beef in a large skillet over medium-high heat. Add onion and bell pepper. Cook until beef is browned, then drain excess fat.
  • Spread a layer of the beef and onion mixture in the pie shell, top it with cream-style corn, and cover with a layer of mashed potatoes.
  • Bake until the pie crust and potatoes are beautifully golden brown, about 30 minutes in the preheated oven.
