Tropical fruit salsa brings vibrant flavors to crispy tilapia - ideal for a refreshing summer meal.
Ingredients:
  • 0.5 fresh pineapple - peeled, cored, and chopped
  • 0.5 pound strawberries, quartered
  • 3 kiwifruit, peeled and diced
  • 1 large mango - peeled, seeded and diced
  • 0.5 cup grape tomatoes
  • 2 tablespoons finely chopped fresh cilantro
  • 1 tablespoon balsamic vinegar
  • 1.5 pounds tilapia fillets
  • 0.5 teaspoon seasoned pepper blend
Instructions:
  • Combine the pineapple, strawberries, kiwifruit, mango, tomatoes, cilantro, and balsamic vinegar in a bowl.
  • Prepare a skillet by spraying it with cooking spray and heating it over medium-high heat. Season tilapia fillets with seasoned pepper blend, then pan-fry until the fish turns white and opaque, about 2 to 3 minutes per side. Serve the fish topped with salsa for a delicious meal.
