Delicious summer salad: Ramen noodle broccoli slaw with crunchy cashews and sunflower seeds, perfect for a light Asian-inspired meal.
Ingredients:
  • 0.5 cup canola oil
  • 0.5 cup white sugar
  • 0.25 cup water
  • 0.25 cup balsamic vinegar
  • 2 (3 ounce) packages chicken-flavored ramen noodles, crushed, seasoning packets reserved
  • 1 (12 ounce) package broccoli coleslaw mix
  • 1 bunch green onions, sliced
  • 1 cup roasted cashews
  • 0.25 cup roasted sunflower seed kernels
Instructions:
  • Mix together canola oil, sugar, water, balsamic vinegar, and ramen noodle seasoning until fully blended and sugar is dissolved.
  • Combine ramen noodles, broccoli slaw mix, and green onions in a large salad bowl. Drizzle dressing over the salad and allow it to rest for 30 minutes to 4 hours - less time for extra crunch, more time for softer noodles. Right before serving, mix in cashews and sunflower seeds and toss the salad once more.
