Lebanese nights dessert: Cold semolina pudding with caramel syrup and pistachios.
Ingredients:
  • 8 cups cold milk
  • 1.5 cups semolina
  • 2 eggs
  • 3 tablespoons rose water
  • 4 cups white sugar
  • 2.25 cups water
  • 0.25 teaspoon lemon juice
  • 1 cup whipping cream
  • 1 tablespoon white sugar
  • 0.33333334326744 cup finely chopped pistachio nuts
Instructions:
  • In a large saucepan, bring milk to a boil over medium-high heat. Gradually add semolina in a steady stream while stirring constantly. Cook and stir until the mixture thickens and boils for 1 to 2 minutes.
  • Take the pan off the heat and whisk in eggs and fragrant rose water until evenly blended. Transfer the silky mixture to a 9x13-inch serving dish or individual dishes. Let the pudding cool, then cover directly with plastic wrap. Chill in the refrigerator for a minimum of 5 hours or overnight.
  • Prepare the syrup by heating ½ cup of sugar and 2 tablespoons of water in a heavy-bottomed saucepan over medium-high heat. Stir to dissolve the sugar and cook until the mixture turns golden brown. Remove from heat and quickly stir in the remaining water; it's okay if it bubbles and hardens slightly, as it will dissolve. Return the pan to the stove, then gradually stir in the remaining 3 ½ cups of sugar until fully dissolved. Add lemon juice, bring to a boil, then simmer for 10 minutes. Remove from heat, cover, and chill. Refrigerate the sealed container of syrup, where it will keep for up to a month.
  • Prepare topping: Whip cream and sugar in a medium bowl with an electric mixer until stiff peaks form. Spread a thin layer of the whipped cream over the pudding and sprinkle with nuts.
  • Slice the pudding into squares and generously drizzle with syrup before serving.
