Layered Christmas pasta salad recipe

Elevate your holiday spread with a vibrant layered pasta salad.
Ingredients:
  • 750.00 ml dried elbow pasta
  • 9.20 gm extra virgin olive oil
  • 4 middle bacon rashers, chopped
  • 1/2 small red cabbage, chopped
  • 420g can corn kernels, drained
  • 2 baby gem lettuces, shredded
  • 2 large tomatoes, diced
  • 1 continental cucumber, diced
  • 187.50 ml grated tasty cheese
  • 2 green onions, thinly sliced
  • 235.00 gm sour cream
  • 247.50 gm traditional mayonnaise
  • 250.00 ml flat-leaf parsley leaves, chopped
Instructions:
  • Prepare pasta according to package directions in a large saucepan of boiling salted water. Once cooked, drain the pasta, rinse with cold water, and drain well.
  • Heat oil in a large frying pan over medium-high heat. Cook bacon, stirring occasionally, until golden and crispy, about 5 minutes. Drain on paper towel.
  • For the creamy mustard dressing: Mix sour cream, mayonnaise, parsley, lemon juice, and mustard in a bowl. Season with salt and pepper to taste.
  • - Layer cabbage at the bottom of a 5-liter (20-cup) glass serving bowl. Add corn, followed by half of the pasta. Drizzle 3/4 of the dressing over the layers. Top with a layer of lettuce. - Combine tomato, cucumber, and remaining pasta. Spread this mixture over the lettuce layer. Drizzle the remaining dressing on top. - Sprinkle bacon, cheese, and green onion over the dish. Season with pepper before serving.
