Wholesome and refreshing "nice cream" made with frozen bananas is the perfect guilt-free spring treat!
Ingredients:
  • 2 frozen bananas, coarsely chopped
  • 1/4 rockmelon, seeded, peeled, coarsely chopped
  • 250.00 ml frozen raspberries
  • Chopped rockmelon, extra, to serve
  • Honey, to serve
Instructions:
  • Cover a baking tray with parchment paper. Spread out the rockmelon pieces in a single layer on the tray. Freeze for 4 hours or until solid.
  • Combine frozen rockmelon and half of the banana in a food processor. Blend until creamy and smooth. Transfer the mixture to a plastic container and freeze.
  • Combine the frozen raspberries and remaining banana in a clean food processor and blend until smooth and creamy.
  • Layer serving glasses with a portion of the rockmelon mixture, followed by the raspberry mixture. Repeat layering once more. Garnish with extra rockmelon and raspberries. Drizzle with honey before serving.
