Delicious layered salad with zesty lemon yogurt dressing. Simply mix and savor!
Ingredients:
  • 1 container (6 oz) Yoplait® Light Fat Free lemon cream pie yogurt
  • 1 tablespoon white balsamic or white wine vinegar
  • 3 cups bite-size pieces romaine lettuce
  • 1 cup chopped sweet red bell pepper
  • 1 cup sliced celery
  • 2 hard-cooked eggs, chopped
  • 1/2 cup frozen sweet peas, cooked
  • 1/4 cup shredded fat-free Cheddar cheese (1 oz)
Instructions:
  • Combine yogurt and vinegar in a small bowl; let it sit for a moment.
  • Divide the lettuce evenly between two 1-quart jars or medium bowls. Layer each jar with half of the remaining 5 ingredients, stacking them neatly on top of the lettuce.
  • Layer each jar with a generous portion of the yogurt mixture, then seal tightly and chill until serving. When ready to enjoy, simply transfer to a serving bowl and mix gently to coat evenly.
