Leek & feta filo cigars

Enjoy light, crisp Turkish cheese-filled pastries - baked to perfection.
Ingredients:
  • 70g butter
  • 1 leek, halved, thinly sliced
  • 200g Feta, crumbled
  • 62.50 ml chopped fresh continental parsley
  • 9 sheets filo pastry, halved crossways
Instructions:
  • Melt 15g butter in a frying pan over medium heat. Cook leek until soft, about 5 minutes. Let it cool before mixing with feta and parsley in a bowl.
  • Preheat your oven to 180ºC and prepare a baking tray with parchment paper. Microwave the remaining butter until melted. Brush one filo sheet with butter, fold it in half lengthways, and spread 1 tablespoon of leek mixture at the short end, leaving a 2cm border. Fold in the sides and roll it up tightly to seal. Arrange it seam-side down on the lined tray and brush with more butter. Continue this process with the rest of the filo, butter, and leek mixture to create a total of 18 delicious cigars.
  • Bake the cigars until they turn a beautiful golden brown, for about 15-20 minutes.
