Savory pork sage sausage combined with roasted butternut squash and leeks for a delicious and flavorful dish.
Ingredients:
  • 1 butternut squash - peeled, seeded, and cubed
  • 0.5 leek, trimmed and cut into 1/2-inch slices
  • 2 tablespoons olive oil
  • salt and ground black pepper to taste
  • 0.5 (16 ounce) package pork sage sausage (such as Jimmy Dean®)
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • In a shallow roasting pan, gently combine the butternut squash and leek. Follow by drizzling them with olive oil and seasoning generously with salt and pepper.
  • Roast the butternut squash in the preheated oven until tender and lightly browned, approximately 25 to 30 minutes. Broil on high until evenly browned, for about 2 to 3 minutes.
  • Brown sausage in a large skillet over medium heat for 5 to 8 minutes, then mix it into the butternut squash and leek mixture.
