Leg of lamb with amazing gravy

Celebrate with a delicious lamb roast, served with flavorful mint sauce and rich gravy - the ultimate Easter feast.
Ingredients:
  • 2.5-3 kg leg of lamb
  • 4 red onions
  • 2 bulbs of garlic
  • 100 g unsalted butter (at room temperature)
  • ½ a bunch of fresh thyme
  • ½ a bunch of fresh rosemary
  • 3 tablespoons plain flour
  • port
  • 1 litre hot organic chicken stock
  • 1 celeriac
  • 1 kg potatoes
  • 1 whole nutmeg for grating
  • 1 big bunch of fresh mint
  • 2 tablespoons red wine vinegar
  • 1 tablespoon soft brown sugar
Instructions:
  • 1. Preheat the oven to 220ºC/425ºC/gas 7. Score the lamb all over with a sharp knife, creating ½cm apart and 3mm deep cuts for a crispy surface and juicy center. 2. Prepare herby butter by blending butter, thyme, rosemary, and seasoning. Spread the butter over the lamb and place it on a bed of onions and garlic in a roasting tray. 3. Roast the lamb in the oven following the cooking time instructions for perfectly cooked meat. 4. Boil celeriac and potatoes until soft, then mash with olive oil, nutmeg, salt, and pepper. 5. Rest the lamb for 10 minutes while you prepare the gravy by mixing onions, flour, port, and stock in the roasting tray. 6. Strain the gravy, keep it warm, and prepare mint sauce with chopped mint, onion, vinegar, and sugar. 7. Serve everything at the table and enjoy!
