Ingredients:
  • 150g self-raising flour
  • 40.00 gm caster sugar
  • 125ml milk
  • 1 lemon, rind finely grated, juiced
  • 1 egg
  • 10g butter
  • 150g fresh or frozen blueberries
  • Icing sugar, to dust
Instructions:
  • Preheat your oven to 200°C. Prepare 6 muffin pans with paper liners, each with a 1/2 cup (125ml) capacity. Mix together flour and sugar in a bowl.
  • In a jug, mix together milk, lemon juice, lemon rind, egg, and butter. Pour this mixture into the flour and stir until just combined. Gently fold in the blueberries. Spoon the batter into the muffin cases. Bake for 20-25 minutes until a skewer inserted in the center comes out clean. Sprinkle with icing sugar and enjoy warm.
