Herb and lemon-infused salmon parcels with sweet roasted capsicum are perfectly seasoned, no extra ingredients necessary.
Ingredients:
  • 500.00 ml Roasted capsicum (see related recipe), thinly sliced
  • 1 green onion, thinly sliced
  • 1 garlic clove, thinly sliced
  • 1/2 small lemon, sliced into thin matchsticks
  • 82.50 ml chopped fresh herbs (see note)
  • 2 tsp chopped capers
  • 150g salmon
  • Steamed chat potatoes, to serve
  • Lemon wedges, to serve
Instructions:
  • Preheat oven to 200°C/180°C fan-forced. Mix capsicum, onion, garlic, lemon, herbs, and capers in a bowl. Season with salt and pepper.
  • Lightly grease one side of each piece of foil. Place a piece of salmon in the center of each foil. Spoon 1/4 of the capsicum mixture on top. Fold and scrunch foil edges, leaving a small opening for steam. Transfer to a baking tray and repeat with the remaining salmon and capsicum mixture.
  • Bake the fish for 20 minutes or until desired doneness. Let it rest for 2 minutes before serving with potatoes and lemon wedges.
