Lemon and herb baked potatoes

Perfectly crispy roast potatoes.
Ingredients:
  • 12 medium Red Rascal potatoes, peeled, roughly chopped
  • 36.40 gm olive oil
  • 40.00 ml lemon rind
  • 86.63 gm lemon juice
  • 30.00 ml chopped fresh thyme leaves
  • 30.00 ml chopped fresh rosemary leaves
Instructions:
  • Preheat your oven to 200C/180C fan-forced. Combine potatoes with oil, lemon rind, lemon juice, thyme, and rosemary in a baking dish. Season generously with salt and pepper, then mix well to ensure everything is coated.
  • Roast until golden and fork-tender, turning occasionally, for about 1 hour. Serve hot.
