Elevate your dishes with zesty lemon and lime zest.
Ingredients:
  • 2 sheets shortcrust pastry, thawed
  • 4 eggs
  • 180ml thickened cream
  • 107.50 gm caster sugar
  • 2 tsp lemon rind
  • 42.00 gm lemon juice
  • 42.00 gm lime juice
  • Whipped cream, to serve
  • Fresh blueberries, to serve
  • Lemon zest, to serve
  • Lime zest, to serve
Instructions:
  • Preheat your oven to 200C conventional or 180C fan-forced with an oven tray inside.
  • Prepare the tart tin by lining it with pastry, making sure to overlap the sheets to fit. Fold any excess pastry over the edges and prick the base with a fork. Line the pastry with baking paper and fill with pastry weights or beans. Bake on a hot oven tray for 15 minutes. Remove the weights and paper, then bake for an additional 18 minutes until the pastry is light golden in color.
  • Whisk eggs, cream, sugar, lemon and lime zest, and lemon and lime juice in a large bowl until well blended. Let it sit for 5 minutes. Pour the mixture into the tart shell and lower the oven temperature to 130°C conventional or 110°C fan-forced.
  • Bake until perfectly set, approximately 45 minutes.
  • Refrigerate until perfectly chilled.
  • Garnish with fluffy whipped cream, fresh blueberries, and zesty lemon and lime zest.
